Palude delle Volpi is a small artisanal producer, crafting an exceptional olive oil experience. Our olives are naturally cultivated, handpicked from our own olive trees, and processed using traditional methods, showcasing the Semidana olive variety.
The Semidana cultivar, native to the Oristano region, is abundant in polyphenols with antioxidant and anti-atherogenic properties, along with other noble substances.
The olives are pressed within hours of harvest. The processing stages are carried out with utmost care, using cold pressing through exclusively mechanical methods, to produce a premium oil, absolutely genuine, with an intense fruity aroma complemented by hints of bitterness and spiciness, accompanied by floral and herbaceous notes. It recalls the fresh scent of the olive tree and the fragrance of the Mediterranean scrub.

Wild Blueberry Compote. No Added Sugars.
In Italy, there is a wild species of black blueberry that grows in the mountains of the Tuscan-Emilian Apennines. This fruit is highly appreciated for its sensory characteristics and its high content of antioxidants, polyphenols, and anthocyanins.
The harvesting season occurs between July and September. We immediately freeze the fruit and process it to create both organic and conventional extra jams, available in 212g jars.
Every production step is controlled with a focus on authenticity and quality. Among its strengths are the absence of added sugars, artisanal processing methods, and low temperatures during fruit cooking.
Wild Raspberry Compote No Added Sugars.
From the Tosco-Emilian Apennines Park, rich in shady spots, come the wild raspberries collected in abundance. Sweet and juicy, we transform them into delicious jam without added sugars.
Red raspberries ripen a bit later than blueberries and at different times, typically between July and August. Due to their fragility, they require delicate harvesting over several days, touching them as little as possible, plucking them only by the stems from which they hang, and protecting them from direct sunlight.
The raspberry compote is so delightful that it can serve as a delicate dessert after a meal. Particularly suitable for both adults and children's breakfast, spread it on toasted bread or whole grain rusks. Perfect for filling croissants, cakes, and tarts.
